Cantonesa Noodles with Anchovies

  • 1 package of Cantonesa noodles
  • 1 can of anchovies
  • 2 tbsp. chopped onion
  • Butter or margarine
  • 1 garlic clove, finely chopped
  • 1 can of mushroom soup, dissolved in ½ can of water
  • Cream to taste

Cook the noodles: Put them into the boiling water for 3 to 5 minutes. The noodles should be "al dente". NOTE: Avoid cooking the noodles for more than 5 min. because they loose their wonderful texture. Rinse under cold running water. Drain.

Fry the the onion and the garlic in the anchovie oil, after they are golden add the chopped anchovies and the mushroom soup.

Add Cantonesa noodles when the sauce has thickened.

Serve hot.
